Canon[]
Official backstory for the characters states that both Agustín's and Félix's birth families live in the Encanto that Julieta's mother Alma created with the miracle. Abuela Alma initially wasn't very happy about Julieta choosing Agustín as her husband, with her needing to warm up to him. With Agustín being accident-prone, it made it hard for him to win his mother-in-law over. The film's co-director, Jared Bush, has stated that Alma didn't approve at first because Agustín was not particularly spectacular, and essentially didn't fit her high standards. Regardless, however, Alma’s opinion did not stop the couple from getting together and eventually marrying.
According to Jared Bush, Agustín being accident-prone is the reason how he met his wife, the town healer, in the first place. He visited her so much that they eventually fell in love. Agustín getting hurt more times than he can count also gave Julieta the chance to try out new recipes, while Agustín helps Julieta to know if her healing food tastes good or not. Even though Julieta finding Agustín in need of her healing can be tiresome, she still loves him for who he is. Just as much as he loves her back.
While the couple is not as outwardly affectionate as their counterparts Pepa and Felix, they still thrive in each other's company and show their affection onscreen multiple times through hugs, kisses, and subtle touches. Despite having been married for many years before the film's events, their romance is still very much alive and healthy. Even when Julieta gets exasperated from having to heal him often, she doesn't stay annoyed for long. He never demands her services and takes it all in good humor. There seems to hardly be any conflict between them, from what is seen in the film.
When their youngest daughter, Mirabel didn't get a gift, Agustín did his best to support her and relate to her, letting her know that he understands the feeling of being different in the family. He wanted to keep Mirabel from believing that she was at fault and, along with Julieta, wanted to let her know she has nothing to prove. While Julieta and Agustín might not always be on the same page, they validate each other's feelings and work together to support their daughters. For example, after their talk with Mirabel in the kitchen, Agustín seems to think that they helped their daughter feel better, while Julieta still looks worried, so he matches her expression somewhat humorously. Later, when Agustín defends his decison to keep Bruno's vision safe for Mirabel's protection when called out for it by Alma, Julieta backs him up to tell Alma that she has been too hard on their youngest daughter. As the couple have noticed that Alma had become cold towards their daughter since that night. The two are shown to support each other as they defend Mirabel from her, or trying to help their daughter feel good about herself. By the end of the movie, they are shown standing close together and looking on proudly at their children.

Fanon[]
Along before Jared Bush confirmed it, people had always suspected that Agustín was one of Julieta's regulars, with him being accident-prone and her serving as their town's healer. In a few dramas doctors and patients have developed feelings for one another, and that is why people feel that this theme relates to them. Julieta healing him with the food she makes also references an old saying; the best way to a man's heart is through his stomach.
With this, along with the confirmation that Agustín wasn't initially approved as Julieta's suitor, fans have been happy to look back and try to imagine how their relationship could have started. A number of fanfictions in the Encanto fandom detail their history together, from how they met, got together, and eventually got married and had children. Some popular headcanons include that Julieta may have been betrothed to another man (similarly to her future daughter Isabela), before deciding to follow her heart. Others also believe that they may have had a secret romance at first, with only Julieta's siblings knowing about their relationship and even helping them sneak around in some cases. It's also commonly believed that Julieta was the original "golden child" of the Madrigals, forced to live the way her mother wanted, until Agustin came along with his goofy demeanor and helped her to loosen up, as well as make her own choice about life.
After they get married, fans like to explore the couples' feelings toward Julieta's pregnancies and the births of their daughters, as well as trying to raise them together with all the pressures of their gifts (or lack thereof). Other fans also like to stay within the present timeline of the movie and explore various events after, such as anniversaries, birthdays, or other events that could happen to the couple. These fan works range in tone from being humorous and sweet to being more mature. Regardless, exploring the milestones of this relationship is a popular topic in fan works about this couple that fans of the movie love.
Another things that fans like to explore in their works is the relationship the couple has with their two older daughters. As the film mostly showcases their interactions with just Mirabel, there is a desire to see how they interact with Isabela and Luisa as well. Many fans like to portray Luisa as a "daddy's girl," or that they might have suspected (but not been able to confirm) that Isabela wasn't truly interested in marrying Mariano. Fans like to speculate how the couple may have tried to reach out and help their two daughters before the events of the film. They may try to get the girls to relax from their constant duties or to talk about their feelings.
