The Original Series[]
In the episode, "Journey to Babel", Ambassador Sarek and his wife Amanda are introduced as Spock's parents. During the episode Amanda speaks to her husband about his estrangement with their son before Sarek falls sick and needs to get a blood transfusion from his son. After it proves successful, both Sarek and Spock have started to reconcile, teasing Amanda for being emotional when she scolds them for their preference with logic. Spock then asks his father why he married Amanda to which Sarek replies saying it seemed the logical thing to do at the time.
The Next Generation[]
Years later, Amanda has passed away and Sarek has developed Bendii Syndrome --a disease that makes him loose control of his emotions and can't be cured. When he establishes a mind-meld with Captain Jean-Luc Picard, his the weight of his emotions are expressed through Picard, especially his deep love for Amanda, Spock and his new wife, Perrin. He eventually passes away from it.
Star Trek (2009)[]
Their relationship and parenting of Spock is explored a little more in depth here with a deleted scene concering Spock's birth as the new parents decided what to name their son before settling on the name Spock. Sarek then comments that Spock has her eyes while Amanda notes the Vulcan ears which he got from his father, propmting a light, rare chuckle of emotion from Sarek. Another deleted scene between them takes place after Spock beats up bullies for picking on him about his human side. Little Spock listens in while his parents banter about his behavior with Amanda pointing out to Sarek that the kids pick on him everyday and although she embraces having Spock follow the Vulcan tradiations, he must also be himself, which means ocassionally being human. This leads to Sarek saying it was the reason for his failure, leading Amanda to ask him that if when Vulcan's get disgusted that they walk away. Sarek replies no, as Amanda replies that humans do before following suit.
Once the timeline shifts due to Nero's interference, he sends a mining vessel to destroy Vulcan. In another deleted scene, Amanda watches the sky with as the mining vessel begans to cause damage on the planet. In that moment Sarek arrives on a hover bike and calls out to her, telling her they need to get to safety. Hiding away in the Katric Ark with the rest of the Vulcan Council, Spock beams down to help evacute them. As they make their way out of the ark to be transported the ledge Amanda is standing on starts to collapse and unable to get a lock on her, she was lost.
Later on, Sarek speaks to his son about their anger towards Nero for Amanda's death. He knows that the last thing Amanda would have wanted was for Spock to suppress his emotions. Sarek then goes on to tell his son the real reason to why he married his wife: because he loved her.
